For Chef Nozawa, bringing authentic and traditional Japanese cuisine to the United States has always been his passion in life. He was known to run a tight ship in his original restaurant, Sushi Nozawa, where he coined the saying “Trust Me,” urging his guests to place the choice of ingredients in the hands of the chef.
